Sausage + Farro Skillet
If your looking for an easy to put together weeknight meal that's also satisfying, this skillet may be your new go-to.
Even with prepping most of the ingredients ahead of time, such as slicing the onion, mincing the garlic and cooking the farro (all of which I store in Tupperware to just pull out), I still dont have time to make everything "from scratch." If you have the time to make a homemade Marinara Sauce, or have a batch leftover in the freezer that would work lovely.
For time intensive purposes, I used a jarred marinara and canned white beans (drained well to omit excess sodium) and a 10 minute quick cooking farro from Trader Joe's.
This recipe is:
Super Satisfying (contains a grain, protein, and a vegetable!)
Can be made Vegetarian or Vegan (sans the sausage + cheese)
Comes together in under 30 minutes
Kiddo Friendly (especially with extra parmesan!!)
Sausage + Farro Skillet
Ingredients
2 Fully Cooked Chicken Sausage Links, Sliced (or sub Turkey Sausage)
1/2 Cup White Beans, Cooked
1 Cup Fresh Spinach
1/2 White Onion, Sliced
3 Garlic Cloves, Minced
1 Tsp Canola Oil
1 Cup Cooked Farro
1 Cup Marinara Sauce
1/2 Cup Parmesan Cheese, Shredded
Fresh basil for garnish
Instructions
In a cast iron skillet, heat canola oil and saute garlic and onions until soft and fragrant then set aside.
Add sausage to the skilled and brown, add spinach, white beans and onion mixture back into the pan and combine.
Add cooked farro and marinara sauce to the skillet and let simmer for one minute to combine.
Top with parmesan and basil & serve.
