Watermelon + Feta Summer Salad

This recipe is a perfect no cook summer side dish. It is:

  • Simple to prepare

  • Made with three ingredients

  • An easy way to look fancy

  • Fresh + different!

Throw some arugula on top, grill a chicken breast or skewer it to take to a potluck.


Watermelon + Feta Salad

Ingredients

  • 4 Oz Feta Cheese

  • ¼ of a Large Watermelon, cubed into bite sized pieces

  • 1 Bunch Mint Leaves

  • Balsamic Vinegar for Drizzling

  • Wooden Skewers

Instructions

  1. Cube the watermelon into bite sized pieces

  2. Cube the block of feta

  3. To assemble the skewers, begin by stacking the watermelon, mint and feta cheese and skewer (or just toss in a bowl and call it a day)

  4. For added flavor, drizzle the balsamic vinegar over the skewers

  5. Serve and enjoy!
